Muesli might be the easiest DIY cereal known to mankind. Originating in Switzerland, this raw oat based mix can be made in big batches and made at a moments notice. This particular recipe is a nod to the ever classic Cinnamon Toast Crunch. All of the warm spice goodness but made with whole foods.
Serves 8
INGREDIENTS
3 Cups Rolled Oats
10 Medjool Dates
2 Teaspoon Cinnamon
2 Tablespoons Light Brown Sugar
1 Teaspoon Vanilla Extract
1 1/2 Cups Raw Walnuts
1/2 Teaspoon Salt
INSTRUCTIONS
Preheat oven to 350 Degrees.
In a small bowl, toss walnuts in vanilla extract. Then coat in 1 Teaspoon of Cinnamon and Brown Sugar. Spread nut mixture in a thin layer on a lined baking sheet and bake for 7 minutes until slightly golden. Let cool completely.
In a large bowl, combine oats, the remaining cinnamon and salt. Chop dates into 1/4 inch pieces and add to dry mixture. Once nuts are cool, add to dry mix and combine thoroughly.
Serve with milk or choice, yogurt, or fruit. You can soak the mix overnight or throw and go as needed. Store in an airtight container for up to a month.
