Mango Lime Quinoa Salad

When you can’t figure out what to make for lunch, a ‘throw it all in a bowl salad’ is the go to. Rich with fiber, plant protein, and all the colors of the rainbow, this salad can be put together in a pinch and add a refreshing jolt to your day.

INGREDIENTS

1 Cup Chopped Purple Cabbage

1 Green Onion

1 Mango

1 Cup Cooked Quinoa

3 Tablespoons Sunflower Seeds

Juice of 1 Lime

2 Tablespoons Olive Oil

Salt to Taste

INSTRUCTIONS

On a large cutting board, finely slice cabbage, green onion and mango.

Boil a pot of water and cook Quinoa to package instructions. Set aside to cool. 

To assemble, in a large bowl toss cabbage, quinoa and green onions with oil and lime juice. Salt to taste at this stage. Tip, the longer you let the cabbage mixture set, the more it will absorb the dressing for more cohesive mixture.

Top with mango and sunflower seeds. Serve cold.
