Simple Black Bean Soup

Soup season might be my favorite season. The warming effect that fills your entire body. The aromatic sensation that wafts through your home. But also the fact that soup can be so simple. This black bean soup is just 8 ingredients and can be thrown together in less than 30 minutes. 

Serves 8

 

INGREDIENTS

  • 2 Tablespoons Olive Oil

  • 1 Onion

  • 3 Cloves Garlic

  • 2 Poblano Peppers

  • 2 Jalapeno Peppers

  • 4 Cups Cooked Black Beans

  • 4 Cups Vegetable Stock

  • Salt to Taste

INSTRUCTIONS

Begin by sautéing diced onion, peppers, and garlic in olive oil until golden brown over medium-high heat. Add in vegetable broth, and black beans. Stir to combine. Bring to a boil, then let simmer for 20 minutes. 

Use an immersion blender to blend the soup into a creamy texture. Add salt to taste. 

Serve warm solo or with fresh avocado, rice and corn tortillas.
