But this ‘screams of summer’ chia pudding is packed with all the refreshing qualities of fruit straight off the vine meshed with the cool creamy deliciousness of pudding. Packed with Omega 3s, Vitamin C, and Fiber, this chia pudding makes for a great breakfast option to power you and your kiddos through an activity-filled summer day.
Serves 2
INGREDIENTS
4 Tablespoons Chia Seeds
1 Cup Coconut Milk
2 Tablespoons Honey
Zest of One Lemon
1/2 Teaspoon Vanilla Extract
2 Cups Fresh Strawberries
Juice of One Lemon
Coconut Flakes
INSTRUCTIONS
In a medium bowl, whisk together chia seeds, coconut milk, honey, and lemon zest. Pour the mixture into an airtight container and chill in the refrigerator for at least 2 hours. During this time, the chia seeds will absorb the milk and create a pudding texture. The longer you leave your chia seeds to soak, the thicker your pudding will be.
When ready to assemble your parfait, in a small bowl, toss sliced strawberries in lemon juice and set aside.
In a glass jar, layer chilled chia pudding, strawberries, and coconut flakes. Create as many layers as you wish. Eat immediately or make extra and store in the fridge for up to three days for breakfast on the go.
