Strawberry Summer Salad

Ingredients

1 Package Spinach

2 Cups Strawberries, Quartered

1 Cucumber, Sliced

1/2 Cup Walnuts

1/3 Cup Blueberries

1/3 Cup Dried Cranberries

1/2 Cup Parmesan Cheese

 

Dressing

1 1/2 Cups Raspberries, Frozen or Fresh

1/2 Cup Olive Oil

1/4 Cup Red Wine Vinegar

1 Small Shallot, Diced, about 2 TBSP

1 TSP Dijon Mustard

1/2 TSP Salt

Pepper, to taste

Instructions

  1. Add spinach to a large bowl, layer on the strawberries, cucumbers, walnuts, blueberries, dried cranberries, and parmesan cheese.
  2. Add all dressing ingredients to a food processor and blend for 30 seconds or until smooth.
  3. Drizzle dressing to preferred taste over salad bowl
